SALMON WITH POTATO, BUTTER BEANS PARSLEY SAUCE

A recipe bursting with nutrients & vitamins!

Add a little bit of good carbs (potatoes), along with iron and vitamin B (butter beans) and of course omega 3 fatty acids (salmon) and you have a super healthy dinner to serve the family.

Simple and quick to make!

RECIPE

Serves 4


4 pieces of smoked salmon (approx 200g each)

700g potatoes, cubed

2 large tablespoon of butter

2 large tablespoon of flour

300ml milk

150ml fresh cream

Salt and pepper

2 handfuls of parsley, chopped

1 handful of dill, chopped

1 tablespoon of olive oil

500g butter beans, canned and drained


Place the potatoes in a pot, fill with water to cover the potato and bring to boil. Simmer for 12-15mins (check if potato is cooked through). Place potato in a colander and run cold water over it to cool it down & set (this is done so the potato doesn’t crumble). Set aside.


Heat a frying pan, place salmon skin side down and fry until skin is golden) approx 3-4mins. Turn over and fry for 1-2 mins more. (add salt and pepper for flavour) Remove from frying pan and set aside.


Place the butter in a deep pot, melt and immediately add the flour. Stir continuously for a few seconds or until the mixture removes easily from the side of the pan.


Gradually start adding the milk, and keep stirring (do not stop). Once the milk has been added in full, add the cream and keep stirring . Add the parsley, salt and pepper. Stir for a further minute and then remove from hotplate.

Heat the olive oil in a frying pan, add the drained butter beans and fry until golden in colour.

Plate up the salmon, beans and potatoes. Pour the cream over the potatoes and beans and its now ready to serve.
