SPICED ROAST CHICKEN WITH CORN SEASONING

I was excited about making this dish for a number of reasons, I like my chicken and chicken stuffing is only ever edible when homemade.

There was something missing in this dish. The chicken was delicious but I had to be very careful that it didnt burn in the oven. I cooked it as per the instructions on the recipe and I could see that it was getting too much colour too quickly. I had never greased foil and then placed it over the food. I followed the recipe and I don’t know if this method accelerated the cooking and that’s why the outside of the chook took a very deep almost burnt colour when I went to check on it an hour after it was in the oven.

The seasoning was nice however something was missing here too. Im not sure what it was but it just didn't have the wow factor.

The chicken seemed to have more flavour the day after. Maybe it's one of those dishes that requires the spices and herbs to settle before eaten.

Overall this recipe was ok. It wasn't excellent, it wasn't bad.

RECIPE

SERVES 4 - 6

1.6kg chicken

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoons chilli powder

60g soft butter

CORN SEASONING

1 tablespoon of olive oil

1 medium onion, finely chopped

2 cloves garlic, crushed

310g of corn kernels, drained

1 cup stale breadcrumbs

2 tablespoon chopped coriander leaves

1 teaspoon grated lime rind

2 tablespoons lime juice

1/2 cup (75g) shelled pistachios, toasted, chopped.

I substituted chilli with sweet chilli sauce & coriander with parsley

Rinse chicken under cold water, at dry inside and out. Fill both cavities with corn seasoning, secure openings with toothpicks. Tie legs of chicken together, tuck wings under. Place chicken on wire rack in baking dish. Combine spices and butter in a small bowl, mix well. Spread mixture over chicken. Cover chicken with greased foil; bake in moderate oven 1 1/4 hours. Remove foil, bake a further 30mins or until chicken is browned and tender.

CORN SEASONING: Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft. Combine onion mixture with remaining ingredients in medium bowl.Corn seasoning can be made unto 1 day ahead.Chicken best cooked close to serving
