Takeaway pizza is good, no one denies this, but this home made version is lighter and healthier.
Tomato, ham, capsicum & mushrooms! You have complete control of the ingredients and therefore if you wish you can substitute with something more to your taste.
Made on tortillas, it is a much healthier version of making pizzas.
There were 10 of us and without a doubt it would have cost a small fortune to have ordered pizza against what it cost to make these beauties.
Try it, you won't be disappointed!
RECIPE
SERVES 4
4 mini tortillas
4 tablespoon of tomato chutney
60g shaved ham
12 (150g) button mushrooms, sliced
1 small red capsicum, finely chopped
1/2 cup grated mozzarella cheese
Preheat grill on medium-high. Line a baking tray with foil. Place tortillas on prepared tray. Spoon 1 teaspoon of tomato chutney on each tortilla. Top each with ham, mushrooms, capsicum and cheese. Grill for 2 minutes or until cheese is bubbling and melted. Set aside for 1 -2 minutes to cool and cut in quarters or halves. Serve.
