A great minestrone is not a quick meal to make. You can simplify this recipe but if you want the ‘OMG! WOW’ factor, you’ll need to follow the instructions.
Paul told me he was not too fond of minestrone in his younger years. I think he’s had a change of heart! He absolutely loved it and so did the rest of the family.
A minestone is the type of dish you must make more than what you plan to eat on the day. It would be a total shame not to have leftovers the following day!
RECIPE: Im not sure why they named it “QUICK’. There's nothing quick about making a minestrone.
This recipe was written many moons ago and I made some changes to the name of the ingredients that we are all now familiar with.
You will need some time set aside to prepare the meatballs but if you have a spare pair of helping hands you may get it done in no time.

RECIPE
BASIC OVEN MEATBALLS
Makes 24
1 egg , beaten
1/4 cup of milk
1 cup soft breadcrumbs
2 tablespoons chopped onion
1 teaspoon salt
500g minced beef
In bowl combine egg and mik. Stir in breadcrumbs, onion and salt.Add mince, mix well. Shape into 1 inch meatballs. Place in shallow baking pan. Bake in moderate oven for 25mins to 30mins.
MINESTRONE
Serves 8
452g cannellini beans
1 tablespoon of beef stock granules / 3 tablespoons liquid stock
1 tablespoon of dried basil
1 large bay leaf
100g spaghetti, broken into 2 inch lengths
450g canned tomatoes, crushed
450g frozen mixed vegetables, thawed & drained
1 teaspoon sugar grated
parmesan cheese
In a large dutch oven combine beans, vegetables, stock, basil, bay leaf and 4 cups of water (if using stock rather than granules, substitute the water for liquid stock) Bring to boil. Add spaghetti. Stir in tomatoes and sugar. Cover, simmer for about 15mins. Add the meatballs. simmer for a further 3-5mins. Remove bay leaf. Serve and sprinkle with parmesan cheese.
