The kids were coming over for dinner and I had very little time to prepare. How happy was I that this was going to take no time to put together!
I figured that if it was meant to be made as a pasta salad, it really did not require to roast the tomatoes as per the recipe instructions so I just chopped and added to mix. I fried up the onion and the bacon, added the pesto (add a little more to add flavour to the dish) and then removed from hot plate but I have no idea what I've done with this particular footage! So sorry!
My only bit of advice is after you've boiled the pasta, drain and add a large tablespoon or two in the pasta. Stir the pasta until you no longer see the butter. Not only will it give it flavour but it will also stop it from drying up.
If there are juices at the bottom of the pan of your egg & bacon mix, also add to the pasta . The pasta will absorb it in minutes an it will give it an amazing taste!
RECIPE
SERVES 4
6 tomatoes, chopped
4 Sourdough bread, cubed 3cm ( I cheated and cut up a frozen garlic bread )
2 tablespoons oil
3 bacon rashes, sliced
1 onion, thinly sliced
250g dry spiral pasta
2 tablespoons of pesto
4 eggs , hard boiled and chopped ( large)
60g rocket or baby spinach
If you choose to bake tomatoes:
Pre heat oven to 200C
Place tomatoes in tray, drizzle with oil and bake for 10-15mins.
If you choose to make the croutons:
Pre heat oven to 200C
Place the cubed sourdough, drizzle with oil and grill for 5-8 mins until it golden or you can grill a frozen garlic bread and cut up ( this is the easiest method and the garlic gives it extra flavour)
In a large frying pan heat oil. Cook bacon and onion, stirring for 5 minutes or until bacon is crisp. Add pesto and stir for 1 minute. Set aside.
Cook pasta as per packet instructions. Drain. ( hint: add butter to stop it from getting sticky)
Add the tomato, egg, spinach or rocket to the bacon mix. Toss mix in the pasta. Add croutons. Serve.
