BEEF SKEWERS WITH CAULIFLOWER COUSCOUS

Skewers are a great way to control your food intake.

I do find them a little time consuming to prepare and at times I think to take the easy way out and cook the meat off the skewer.

Meat on skewers make a lovely presentation on a plate and when you are entertaining this is a much easier way to control portions.

RECIPE: Easy to follow. I marinated for only half an hour and they were delicious. I chose to BBQ which captured not only a great taste of herbs and spices but it gave them a smokey aroma that was to die for!

The cauliflower couscous was delicious! Who would have thought that cauliflower and cranberries would work so well.

For my vegetarian friends, this one is defiantly for you. So easy and simple and it won’t disappoint you.

Eat it or Starve!?? A definite munch munch!

RECIPE

SERVE 4

2 tablespoons cumin

1 tablespoon paprika

1/2 teaspoon nutmeg

1 teaspoon turmeric

1/2 teaspoon cayenne pepper

1/2 cup of parsley continental, chopped

2 gloves of garlic, chopped (or garlic powder)

1/2 cup of sweet sherry

1/2 cup olive oil

1 lemon, thinly sliced

CAULIFOWER COUCOUS

1 cup couscous

250g cauliflower florets

2 tablespoons olive oil

2 tablespoons of pistachios, chopped

1/4 cup dried cranberries

1/4 cup parsley continental, chopped

Combine spices , parsley, garlic and olive oil in a large bowl. Add beef and turn to coat. Cover and marinate in the fridge for 30mins -1hour.

Soak 8 bamboo skewers in cold water for 30mins ( or use 8 metal skewers)

Meanwhile to make cauliflower couscous, place couscous in a bowl and pour over 3/4 cup (185ml) warm water. Cover with a tea towel and set aside. Cook cauliflower in salted boiling water for 5 minutes or until tender. Drain. Allow to cool for a few minutes. Place cauliflower in food processor and chop finely.

Fluff couscous with a fork , season with salt and pepper, then stir through cauliflower, olive oil, cranberries, pistachios and parsley.

Drain beef and thread onto skewers. Heat a BBQ or chargrilled plate and cook the beef skewers 1-2 minutes on each side. Serve immediately.
