I was looking forward to making these little beauties and ohhhh boyyyyy they didn’t disappoint me at all!

It was a cold day and I couldn’t think of anything better than to be baking, this recipe was just what the doctor ordered.

Delicious, amazing, challenging and divine…… give it a go! Its not as hard as it may look :)

RECIPE

MAKES 12

3 cups of self raising flour

80g butter, cubed

1 1/3 cups milk

200g feta cheese, crumbled

270g semi dried tomatoes, drained and chopped

2 tablespoons chopped chives

1 egg, beaten

Preheat oven to 200c. Line a baking tray with greaseproof paper.

Sift flour into a large bowl. Add butter. Using your fingertips, rub butter into flour until mixture resembles fine breadcrumbs.

Or

Add the flour in the mixer, add the butter and mix with the dough attachment.

Add milk gradually until it forms into a soft dough. Turn onto a floured surface. Knead until smooth. Roll into a 1cm thick rectangle.

Sprinkle with feta cheese, semi dried tomatoes, chives. Roll up from longest side like a swiss roll. Cut into 12 even rounds.

Lay them flat on the tray. Brush them with egg. Bake for 15-20mins until cooked through and golden brown. Transfer to a wire rack to cool.
