SALMON CHEESE LOGS

One word….delicious! I should really add ‘absolutely’ in front of that! I could have eaten it all by myself!

This is one of those simple recipes that you could put together in no time and take with you to a dinner party. This log will certainly impress!

RECIPE

Serves 10-12

250g cream cheese, at room temperature

120g smoked salmon, finely chopped

1 tablespoon lemon juice

1 small red onion ,finely chopped

1 tablespoon horseradish cream

1/4 cup continental parsley, finely chopped

2 tablespoons dill, finely chopped

black pepper

Lightly fry the red onion until soft. Set aside and allow to cool.

Stir cream cheese in bowl until smooth. Stir in salmon, onion, lemon juice and horseradish until well combined.

Shape into a sausage shape.

Combine parsley and dill. lay out a sheet of foil and overlap with a sheet greaseproof paper. Spread the parsley mix over the sheet. Sprinkle pepper over the parsley mixture.

Roll log in herbs until completely coated. Place log to the side. Remove any left over herbs off the greaseproof paper. Place the log back on the clear piece of greaseproof paper and roll highly starting from one end of the sheet. Take the roll in the greaseproof paper and roll in foil to retain its shape tightly.

Refrigerate for 2-3 hrs or until firm.

Remove from foil and greaseproof paper. Place on a platter and serve with crackers.
