Fun to make, easy to make and of course delicious!
I made this on a game’s night and it was a total success.
Lay out some small plates, a set of tongs and let them help themselves.

Serves 8
Note: Dont forget I double or triple my recipes
because I feed an army!
Go by the below measurements.
If only 4, half the amount stated below
1 tablespoon of olive oil, plus 1 extra
2 small brown onions, chopped
2 garlic cloves , crushed
600g minced beef
Taco seasoning 30g
2 teaspoons ground cumin
1 handful chopped parsley
2 red chillies, deseeded & sliced
400g red kidney beans, drained & rinsed
400g can crushed tomatoes
300g sour cream
1 large packet of CCs corn chips
1 large avocado, chopped
1 lime juice
Mix well, red kidney beans and crushed tomatoes.
Heat olive oil in frying pan. Cook the onion until soft, add garlic & chilli and stir fry for a minute. set aside.
Heat additional oil in deep frying pan over medium heat. Add mince meat, cook stirring for approx 5 mins. Add the tomato and red kidney mixture, cook in low heat until meat is browned. Add cumin and parsley. Mix well. Add cooked onion mixture and allow to simmer on low heat for a further 5 mins , then remove from heat. Season with salt and pepper.
In the meantime, cut up the avocado into chunks and drizzle lime juice so it doesn’t change colour.
Arrange the CCs on a platter. Add over the CCs your mince meat mixture, top with sour cream, top with avocado / guacamole chunks. Ready to serve.
