I don't remember the last time I made a pasta sauce which did not require to be cooked in some way. I thought what the heck, just make it the way Jamie makes it and it was just fabulous!

So good was this recipe that I think anyone who has 10-12mins to boil up some pasta, & no further spare time, should be making this recipe! You will not be disappointed.

One catch, you do need a food processor. These little amazing machines are now much more affordable. You do not need to spend a fortune and they all do the same thing. Invest in one or ask Santa for one this year.

RECIPE

Serves 4

500g dried rigatoni/ penne pasta

1 large tablespoon of butter

40g parmesan cheese

100g almonds, roasted (plus an extra handful)

2 chillies, seeded

2 large handfuls of fresh basil

450g cherry tomatoes plus 100g halved

CIABATTA

1 ciabatta loaf, sliced

butter

dried thyme, 2 tablespoons

Salt

Toast the almonds under the grill for a few minutes. Set a handful aside.

Add in food processor cherry tomatoes, chillies and basil and almonds and process until smooth and cream texture.

Boil pasta as per instructions on package. Drain, place in large deep dish. Add a large tablespoon of butter soon after it is drained, and mix well until butter has melted.

Add the sauce in the pasta and mix well. It is now ready to serve.

CIABATTA

Place slices of bread on greaseproof paper on flat tray. Butter each slice and sprinkle with dried thyme and salt. Place under hot grill until they are golden brown , approx 2-3mins.

Serve along side of pasta.
