SNAPPER WITH STIR-FRIED VEGIES & BLACK BEAN SAUCE

This was amazingly delicious but I don’t think stir fries are always easy to make. For starters, you need to have time to prep vegetables & that is always time consuming.

I had to stir-fry the veggies in batches due to the volume (as you may already know, I cook for an army!), the rest is easy. The fish was sensational! The recipe did ask for skin on but I bought them skinless and it was just perfect. Over cooked fish can taste horrible so check it after 2 minutes on each side.If the fillets are not too thick, this should be just enough.

Not a beginner’s dish but certainly one that must be tried.

RECIPE

Serves 4

I made enough for 8-10 persons. The recipe below is ingredients to serve 4 persons.

4 x 200g snapper fillets , no skin

Salt and pepper

1 lemon

Sesame oil

1 large brown onion, sliced thick

1 clover of garlic, crushed or chopped finely

3cm of ginger, chopped finely

1 medium green capsicum , chopped coarsely

1 medium red capsicum, chopped coarsely

6 green shallots, sliced finely

100g snow peas

100g broccolini, chopped coarsely

1/4 cup of oyster sauce

1/4 cup of black bean sauce

500g bok choy, chopped roughly

1 cup bean sprouts, chopped roughly

Heat oil in wok. Stir fry garlic and ginger, adding onions. Fry until onions are just soft. Add capsicums and stir fry for another min or two. Add half of shallots, snow peas & bean sprouts. Sir fry a few seconds between each add-on.

Add sauces and mix well. Stir fry for a min and then remove from heat and transfer to other dish.

Heat sesame oil back in the same wok and add the broccolini, stir fry for a minute. Add the balance of shallots , add the bok toy, stir fry for another minute. Add the rest of the cooked vegetables and mix . Turn heat off.

Heat some more sesame oil in frying pan. Add the snapper fillets (pieces), add salt and pepper and juice of a lemon. Fry on each side for approx 2 minutes or until cooked through.

Boil some rice as per package , add a little butter and salt and set aside.

On a plate, serve a large spoonful of cooked rice, top with vegetables and a piece of snapper. Ready to serve.

PLEASE NOTE: Snapper fillets should be boneless but at times you may get a string of bones in a fillet. Not recommended for young children.
