Delicious! I love my cold meats along with marinaded artichokes and capsicums and I’m in heaven!
Very easy to make and although it has been titled a salad, I served it as a main and it was just perfect.

RECIPE
Serves 4
Olive oil
500g mixed pasta
2 cloves garlic, chopped finely
300g jar chargrilled or marinated capsicums (strips preferably) - chopped roughly
100g salami, cut into strips and separated
6 slices of prosciutto, cut into strips and separated
170g jar marinated artichokes, drained and cut roughly
250g cherry tomatoes, sliced in three
Salt and pepper
1 handful of parsley , chopped finely
1 handful of basil, chopped finely
DRESSING FOR PASTA
3 tablespoons of balsamic vinegar
3 tablespoons of olive oil
Add a tablespoon of olive oil in frying pan and add the garlic and onion fry until onion is soft. Add the artichokes, capsicum and mix well. Season with salt and pepper. Add the parsley and basil. Take off the heat.
Add the prosciutto and salami, mix well. Add the tomatoes and set aside.
Mix well the balsamic vinegar and olive oil in a bowl and set aside.
Cook the pasta as per package instructions. Drain pasta.
Add the balsamic vinegar mixture (dressing) and mix well.
Place the pasta in a deep serving dish and add the deli mixture, combine well. Ready to serve.
