A great bolognese sauce can make your pasta dish a very special dinner! If you get the sauce wrong then you might as well give the pasta to the dog!

A great bolognese sauce will taste great on the day and out of this world the day after!

This is a great recipe and a little different that the ones that I have made in the past. Delicious! You can use any pasta you like, I chose ravioli this time around.

RECIPE

Makes 1 litre (don’t forget that I triple the quantity because I feed an army!)

oilve oil

2 cloves garlic, chopped finely

1k of crushed canned tomatoes

500g lean mince beef

200g chopped onion

200g chopped carrot

2 stalks chopped celery

3 slices of bacon, chopped

125ml of red wine + extra

a handful chopped parsley

280g Pasta sauce

1 large tablespoons of tomato paste

Salt and pepper to season

In a large pot heat some olive oil, add garlic and then onion, fry until union is soft ( a few minutes). Add bacon, keep stirring for a few minutes. Add carrots,celery & parsley. Season with salt and pepper.

In a frying pan, fry the mince with red wine until browned. Drain mince slightly, add to the vegetable pot. Add a little extra red wine.

Add tomatoes, pasta sauce, tomato paste and mix well. Season further with salt and pepper if required. Allow to simmer for 15-20mins.

In the meantime, cook your pasta and drain ready for when sauce is ready to be served.

NOTE: I like to mix my sauce in the pasta to give it taste.Allow it to stand for a few minutes before serving.
