This was different! I have never made rocky road with gummy bears nor have I ever made rocky road without glazed cherries. I was sceptical about this recipe but surprisingly it turned out quite nice!
My first attempt was quite a disaster. I sent the girls to get me milk chocolate and they came back with dark chocolate. I think the dark chocolate is too strong in flavour for this recipe and milk was just perfect.
Surprisingly very nice. A nice plate of sweets to take with you to gathering! And super easy to make!

RECIPE
Makes 24
1 1/2 cups (70g) mini marshmallows
1 cup shredded coconut, toasted lightly
1 cup (100g) walnuts, toasted, chopped coarsely
175g packet gummy bears
400g milk chocolate, chopped
Lightly grease a 20cm x 30cm lamington pan. Line base with a piece of baking paper allowing a 5cm overhang.
Combine marshmallows, coconut, walnuts and gummy bears in a large bowl. Melt chocolate in a medium heatproof bowl over a saucepan with simmering water or melt in microwave for no longer than 30-40secs spurts .
Spoon the chocolate in the marshmallow mixture and mix well. Add the mixture into the prepared pan and lightly tap it down. Refrigerate for 1-2 hours before cutting int squares.
