BANANA CAKE

COOKBOOK: Country Women’s Association Classics
 

Do you have some old bananas laying in your kitchen waiting for bin night? don’t throw them out! Bake a cake and everyone will love you!
 

I love banana cake because you don't really need anything else to accompany it. The icing on my banana cake was just a bonus.
 

Super easy to make! Great served with a coffee or tea!

RECIPE

Serves 8-10
 

2 cups plain flour

3 teaspoons of baking powder

125g unsalted butter, at room temperature

1 cup caster sugar

4 ripe bananas, mashed

2 large eggs, lightly beaten

2 teaspoons vanilla essence

Pre heat the oven at 180C. Lightly grease a cake tin - 25cm

Beat butter until smooth (approx a min or two) with electric beater.

Add sugar in batches, add beaten egg in batches, slow down the beating and add the mashed banana.
 

Stop the beating and add the plain four (sifted), combine well in the banana mixture. Add the baking powder and vanilla essence and combine well once again.
 

Pour batter in cake tin and bake for approx 45-50mins or until cooked though in the centre.
 

NOTE: to test this, careful push a skewer in the centre of the cake. If the skewer is clean of batter, its cooked through. If there is batter attached to the skewer, let it bake for a further 5-8mins.
 

I quickly made some icing and covered the top. This is not necessary as it is a nice moist cake. If you do choose to ice it, you will need to let it cool down completely before you do so.
