COOKBOOK: Fast Seafood - Women’s Weekly
I love my octopus and anything seafood. Baby octopus was something that I always struggled to cook as you can make it tough & chewy very easily. Ive learnt with baby octopus 4mins max gives you a perfect result, not chewy and retains all its flavours.
This is an easy recipe with a great marinade.

RECIPE
Serves 4
2 large tablespoons chopped parsley
2 cloves of garlic, chopped
800g baby octopus, cleaned
1 tablespoon olive oil
1 tablespoon of lemon juice
2 tablespoons of sweet chilli sauce
2 cut of lettuce (of your choice)
Add baby octopus in a bowl. Add garlic, parsley, sweet chilli sauce, lemon juice and olive oil. Combine well. Leave in the fridge for an hour.
Heat a frying pan. Add baby octopus in batches. Fry only for a max of 4 mins, turning them half time.
Please note: if it’s producing too much liquid, remove some of it in order to keep cooking the octopus.
Serve octopus over lettuce and its ready to serve.
