COOKBOOK: Jamie’s 30minute Meals
OMG we should all add grapes to our green salads! I couldn’t get enough of it! What a great combo, pancetta & grapes! Who would have thought this was going to be so delicious!
Im not so keen about green salads in winter, but this one won me over!

RECIPE
Serves 4
1 tablespoon butter
12 rashes of pancetta
1 large clove of garlic, cut into large 3-4 pieces
150g salad leaves, mixed
Salt & pepper
1 handful of grapes, cut in half
1 tablespoon balsamic vinegar
1/2 lemon, juice
Heat the butter in a frying pan, add the garlic, allow it to fry for a few seconds. Add the pancetta in single layer. Let it collect a golden colour and flip over. Once golden, it can be removed from pan. Discard garlic.
Mix the grapes with the lettuce, add the pancetta, salt and pepper, balsamic vinegar, lemon and mix well. Ready to serve.
