So easy to make as a light lunch that will keep everyone satisfied.
Tacos without the tacos sounds super healthy to me. For those missing the real tacos , place a bowl filled with nachos in the centre of the table for extra Mexican flavour.
I loved everything about this recipe. I can see how it can be served on a grander scale along with extra dishes or just on its own on a lazy summer’s night.

RECIPE
Serves 4
2 tablespoons of olive il
1 large red onion, halved, sliced and diced
1 large red capsicum, halved, remove membrane, sliced and diced
600g beef mince
1 handful of parsley, chopped
2 x 30g sachet of Mexican seasoning
375g jar of pasta sauce or junky pasta sauce
1 large tomato or 2 medium , halved, sliced and diced
1 baby cos lettuce, remove 8 cupped lettuce leaves, rinse quickly under water and whinge
1 cup grated tasty cheese
2 medium avocado, sliced
Heat the oil in a deep pot over medium heat. Add the red onion and capsicum. Fry stirring until the onion is soft. Add the mince meat, salt & pepper, parsley and Mexican seasoning. Combine well. Add the tomato sauce, mix well and simmer for 12-15mins. Remove from heat.
Prepare the lettuce cups. Rinse lightly under cold water and place in a salad wringer. Place 2 lettuce leaves on each plate, top with 2 tablespoons of mince mixture. Top with chopped tomato, grated cheese and avocado.
Ready to be served
