CHICKEN CURRY WITH APRICOTS

This recipe was selected by Penny Fourfouris and I will admit that when I saw that the recipe had apricots in a chicken curry, I imagined it to be a flop.

I now can say that I was completely wrong!

This dish was sensational! And I must add that I'm really not a big fan of dried apricots but the combination of spices, herbs and apricots was delicious!

RECIPE: This is a very small recipe book of curries and this is the 2nd recipe which I make from this book. The 1st recipe was just as nice (Vegetable Curry). Great cookbook that needs recognition! It was published by Hinkler Books and printed in China . Who are the cooks? There is no mention!

If you like your curries, here is another one for you to try, You won't be disappointed.

RECIPE

SERVES 6-8

18 dried apricots

1 tablespoon oil

2 x 1.5kg (drumsticks / wings)

3 onions, thinly sliced

1 teaspoon of grated ginger

3 cloves or garlic, crushed

3 large fresh green chillies, seeded and finely chopped OR

3 tablespoons of sweet chilli sauce

1 teaspoon of cumin (powder)

1 teaspoon of chilli powder

1/2 teaspoon of turmeric

4 large tomatoes, peeled and cut into eight

Dark raisins

carrot, grated

Almonds , toasted

Soak the dried apricots in one cup (250ml) hot water for 1 hour. (or, chop up the dried apricots in a food processor - no need to soak, just add to the mix as per my video instructions)

Heat oil in large saucepan, add the chicken in batches and cook over high heat for 5-6 minutes or until browned.

Remove from the pan. Add the onion and cook, stirring often for 10mins, or until onion is softened and browned.

Add the ginger, chopped chillies, garlic or sweet chilli sauce and cook stirring for two minutes.

Stir in the cumin seeds (or powder) and ground turmeric and cook for a further 1-2 minutes.

Return the chicken to the pan, add the tomato and apricots, with any remaining liquid and mix well. Simmer, uncovered for 35mins, or until chicken is tender.

To serve, spoon the liquid over the chicken. Serve with steamed rice mixed with raisins, grated carrots & toasted almonds (this is not in the recipe and I didn't have any time to add the extra ingredients to the rice. We had it plain and it was delicious with the chicken curry
