COOKBOOK: Super Food Ideas Mag April 2008

I’m always excited to see these ‘recipes’ pop up!
Not necessarily a recipe but more so a suggestion for a filling in a bun.
I don't ordinarily go out of my way to make subs/rolls so this was a nice addition to my weekly recipes.
I made these for lunch and as you may have guessed, they were a hit!
Don’t forget to put them under the grill! A crusty warm bun is just the best!
Great for a beginner!
RECIPE
SERVES 4
200g can tuna with tomato and onion, drained
2 tablespoon of corn kernels
2 tablespoons of mayonnaise
4 dinner rolls
1/2 cup of Lettuce- shredded
1 carrot - grated
grated cheese
Cherry tomatoes, quartered
Preheat oven to 220C
Combine tuna, corn and mayonaise in a bowl. Place rolls on a baking tray. Halve rolls lengthways, leaving 1 side joined.
Spoon half the tuna mixture into each roll. Press down lightly. Sprinkle with cheese. Bake for 5mins or until rolls are slightly golden and cheese has melted. Set aside for 2 mins to cool. Top with lettuce, carrots and tomatoes. Serve.
