I could live eating these every day!
This recipe is definitely for those who love their smoked salmon.
What a great platter for an entree or a light lunch on a hot day.
I made them for lunch on a very hot day and they took minutes to prepare and minutes to be eaten.
A must for a summer’s day!
RECIPE: I love the name of this cookbook! And that is what I call a diet, one that you can eat all day long!
I thought this was a well written recipe, vey easy to follow and delicious.
This recipe is definitely one for beginners to give it a go!
Makes 12 (but I only made 6 with measurements below)
12 slices smoked salmon
1 cucumber, peeled, deseeded and cut into matchsticks
1 long red chilli or capsicum, deseeded and thinly sliced
Coriander or parsley (I used lettuce)
2 tablespoons of sweet chilli sauce
2 tablespoons of honey
2 tablespoons of lime juice
1 tablespoon of fish sauce
Separate the smoked salmon slices and lay them flat on a work surface. Arrange the cucumber, chilli or capsicum, lettuce and herbs on the smoked salmon slices, placing an equal amount on each slice.
Combine the dressing ingredients and drizzle over the cucumber filling.
Roll up smoked salmon slices to enclose the filling & dressing . Serve.
