Why was I so silly to have only made one cake! By the time I turned around, it was gone! Absolutely delicious! The orange syrup on the cake complimented the blueberries beautifully. It took minutes to prepare, 40mins to bake and seconds to be eaten!
RECIPE: Easy to follow. Fantastic recipe for a beginner. Don't be scared to add a little more syrup.It will be absorbed in the cake and it makes it that little more moist and tasty to eat.

RECIPE
SERVES 10
250g butter, softened
1 cup sugar
4 eggs, lightly beaten
1 1/2 cups self raisin flour
1/2 cup almond meal
125g fresh blueberries
Finely grated rind for one large orange
ORANGE SYRUP
1/2 cup of orange marmalade
Juice of one large orange
1/2 cup sugar
Pre heat oven 180C
Beat the butter and sugar until light and creamy . Add eggs gradually. Fold in the flour and almond meal until mixture is smooth. Add orange rind and blueberries. Mix well.
Spoon batter into a 22cm springform cake tin. Bake for 40mins or until set and golden.
SYRUP
Combine all ingredients in a pan and stir on low heat until sugar dissolves. Bring to boil and reduce heat. Simmer for 1 min. Let stand for 5mins. Pour over the cake. Let it stand for 5 minutes before taking it out of pan. Ready to be served.
