SMOKED SALMON WITH JAPANESE SOBA NOODLES

I love smoked salmon. Some will say that too much of it is not necessarily good for you……….but they say the same about chocolate! Everything in moderation is good!

I liked this dish but I liked it even more the day after. Soaking the noodles in soy sauce and allowing it to absorb the flavours made this dish very flavoursome.

I made this meal late on a weekday and it didnt take long to put together. A great dinner meal, fuzz free.

Im not a huge fan of Lyndey Milan’s cookbook but this recipe was a hit.

RECIPE

SERVES 4

125g soba noodles

1 tbsp olive oil

3 spring onions or shallots, sliced

150g mushrooms, mixed - thinly sliced

100g snow peas

basil leaves - a handful- chopped

3 tablespoons of ginger - chopped

250g smoked salmon - cut into 3cm pieces

4 tablespoons soy sauce or ponzu sauce

Cook the soba noodles in boiling salted water for 5 mins. Drain.

add soy sauce or ponzu sauce.

Lightly fry the spring onions, add the ginger, mushrooms and snow peas. Add basil.

Toss the lightly fried mixture in the soba noodles and mix. Add the smoked salmon pieces and toss. Ready to serve.
