CHICKEN PANCAKES

I read pancakes and I think of breakfast.
Add chicken to pancakes and confusion sets in. Do I eat these for breakfast,lunch or dinner?
Definitely a meal on its own! Super easy to make and great served with a green salad.
So you have some left over cooked chicken and you really dont want to make sandwiches again……add a little sweet chilli sauce, spring onions, eggs and coconut milk and you have yourself a great batter for delicious pancakes!
Eat it or Starve!?? They were eaten very fast!

RECIPE
SERVES 4
2 tablespoons oil
500g chopped /shredded cooked chicken (I used shredded BBQ chicken)
270ml coconut milk
2 tablespoons sweet chilli sauce
3 shallots, chopped
2 eggs, whisked lightly
1/2 cup cornflour (optional)
Combine chicken and shallots, add coconut milk, sweet chilli sauce and eggs. Add a little cornflour if you feel its a little runny ( I didnt use any cornflour in my mix)
Heat a frying pan with oil. Spoon 1/3 cup of mixture into the pan, press down, cook for 2 minutes on each side or until golden brown. Remove from heat. Repeat with remaining mixture.
Serve with cucumber or green salad.
