SPICY CHICKEN LEGS WITH MANGO SALAD

Who doesn’t like chicken legs! Here is another combination of spices and herbs for you to marinate your chicken pieces. I left it in the fridge for half hour and straight in the oven. The taste of these legs was mouth watering!

The salad was a bag of mixed goodies! I was sceptical about the taste of mango with the greens but again I loved it.

Well done to AWW for another great recipe!

Eat it or Starve!?? Eat for sure….and you’ll eat the leftovers the following day

RECIPE

SERVES 4

2 tablespoons honey

2 teaspoons rice vinegar

1 tablespoon of five-spice powder

5 cloves garlic, crushed

1/2 cup soy sauce

1 tablespoon of sesame oil

8 large chicken drumsticks (1.2kg)

MANGO SALAD

2 large mangos (450g) - cut and sliced

2 large lebanese cucumbers - peeled and sliced

4 shallots

1 cup parsley, chopped

200g snow peas, trimmed

1/4 cup lime juice

1 tablespoon peanut oil

Combine honey, vinegar, five spices, garlic, soy sauce in a bowl. pour over the chicken and mix well. Marinate in fridge for 30mins.

Place chicken tray deep tray, pour over any excess marinade. Bake in moderate oven (180C) for 45mins.

SALAD

Heat peanut oil in pan. Fry lightly snow peas and shallots. Set aside.

Combine all remaining ingredients and add the snow peas and shallots. Ready to serve.
