Prepare the mixture and then drop spoonfuls to fry and you have yourself small patties/burgers to enjoy as a snack, in a sandwich or on a picnic.

MAKES 36
1 bunch of parsley, chopped
1kg chicken mince
1 onion, finely grated
2 tablespoons of flour
2 tablespoons mild curry paste
1 egg, beaten
2 teaspoons of salt
1/2 cup of oil (I use olive oil)
Place mince, onion, four, curry paste, salt and egg in bowl and mix well.
Heat oil in frying pan over medium heat. Drop 2 tablespoons of mixture in hot oil and turn immediately. Flatten slightly with a spatula to form a patty. Cook for approx 3 minutes on each side or until browned and cooked through.
