How can you go wrong with salmon, snow peas and red onion!

SERVES 4
350g dried spiral pasta
180g snow peas (or sugar snap peas)
2 tablespoons of oil
Salt & pepper
2 salmon fillets (with skin on) 200g each
1 red onion , sliced thinly
190g sour cream
2 tablespoons fresh lemon juice
1 tablespoons lemon rind
extra olive oil for frying
Add water in a large saucepan, add a drop of oil and a pinch of salt. Add pasta and cook as per package instructions.
Meanwhile, heat oil in pan and fry the red onion until soft. Add salt and pepper. Add snow peas and stir fry for a few minutes. Add lemon rind and juice and mix. Add mixture to drained pasta.
Heat oil in pan and fry the salmon portions approx 3-4mins each side. Add a little salt and pepper on fillets. Break up in the pan with a wooden spoon. Add sour cream and stir lightly for a few seconds. Turn heat off.
Add salmon to pasta, combine well. Ready to serve.
