Yankee & out of this world! I can still taste the flavours that this dish delivered.
Of course for those who don’t like their meat medium-rare this requires further time in the oven.
I have an equal split in the family as to who likes their meat well done and medium-rare. What I think works well is to buy a thicker piece of meat and a thinner piece that I know will cook faster. This normally keeps everyone happy in my household.
The meat was overly tender! Great recipe from the Disney Chefs!

RECIPE
SERVES 6
1/4 cup of olive oil
tablespoon of butter
Salt & pepper
1.2 kilos beef eye fillet
2 cups chopped carrots
2 cups chopped celery
2 cups chopped onions
1/4 cup chopped garlic
4 tablespoon of chopped thyme
1/2 cup plain flour
1 cup burgundy wine
6 cups beef broth
Sprinkle the thyme , salt & pepper on a chopping board and roll the meat over it until completely covered.
Preheat oven on 200C
Heat oil in deep pan and add butter. After the butter has melted add the meat and turn after 5-7 mins and browned. Remove from pan and place in deep oven casserole dish.
In the same oil/butter fry the garlic lightly.
Add the vegetables and fry for a minute. Add the flour and mix well but dont allow it to stick. If it starts to stick remove from heat. Add gradually the wine and stock and stir until it thickens.
Pour the vegetable mixture over the meat and bake for 40mins-1hr , depending on how you like your meat cooked, in moderate oven (180C). Ready to be served.
