TUNA & BROCCOLI BREAD BAKE

I called it a tuna lasagna! At first glance of the recipe I thought it was going to be too much bread in a casserole dish. Well I was so wrong! It set the bake so well! Terribly easy to make and absolutely delicious to eat! I'm not a fan of tuna from a can but it was perfect for this dish.
A great way to introduce tuna in your dishes.

RECIPE
Serves 4
250g broccoli, trim off into florets
1 tablespoon of butter
12 slices of white bread, crust removed
425g can of tuna in oil, drained and flaked
1 onion, chopped
4 spring onions, sliced
8 eggs
salt & pepper
2 teaspoons mild english mustard
1 cup milk
1/2 cup of parmesan cheese
1 cup tasty cheese
Preheat oven to 180C.
Add a little water to microwave dish. Cook broccoli in microwave for 4minutes or until just tender. Darin and set aside.
Lightly grease a casserole dish (20cm).
In frying pan, melt a tablespoon of butter. Add the onion and fry until soft, add salt and pepper for seasoning. Add shallots and fry for a further minute. Add tuna and mix well. Remove from heat.
Whisk eggs, add milk and mustard and mix well. Add salt and pepper.
Place bread slices at bottom of casserole dish. Add a layer of the broccoli. Add tuna mixture. Repeat with bread slices. Top with egg mixture. Sprinkle with parmesan and top with grated cheese.
Bake for 40mins or until golden and set.
Allow it to stand for 15mins before slicing.
