LEEK & SMOKED CHICKEN SALAD WITH ORANGE & MUSTARD DRESSING

This is a great salad with lots and lots of flavour and full of nutrients. There is a bit of time taken in preparing the vegetables but there is no need to cook a chicken, instead buy a BBQ chicken from your local supermarket and this will save some time.

This is the type of salad that is classified more like a main meal than a side dish.

A great summer salad for all!

RECIPE

SERVES 4

2 tablespoons of olive oil

1 leek (300g), sliced finely

1 large carrot, cut into matchstick slices

2 medium capsicum (400g) , cubed

500g smoked chicken or BBQ chicken breast, chopped ( I purchased a cooked chicken from the supermarket for this recipe you will need half of the chicken, shredded)

200g snow peas, trimmed

1 green lettuce, trimmed and shredded

ORANGE MUSTARD DRESSING

2 oranges , juiced

2 tablespoons of orange rind

2 tablespoons apple cider vinegar

1 tablespoon wholegrain mustard

2 tablespoons of sour cream

Make orange mustard dressing. Mix all ingredients, still well and refrigerate.

Heat olive oil, stir fry the capsicums, carrots, leek until almost soft. Add chopped chicken. Add snow peas and stir fry for a 1-2 mins.

Take off heat and let it stand for a minute or two. Add the mustard dressing and blend well in salad. Ready to serve.
