I have finally come across a recipe in Jamie’s 30Minute Meals cookbook that will only take that long to make!

It’s about time Jamie, every other recipe in this book has taken an hour plus to prep and cook.

This trifle is one of the simplest that I have ever made and it was so delicious. Mascarpone cheese is found in your supermarket & it is sold in a tub (can be found near the cream cheese in the deli section). In no time it was put together! I left it in the fridge until after dinner and it was just perfect! The cheese mix was delicious and the biscuits were just soft enough. A nice cold dessert to serve on a summer’s day.

RECIPE

Serves 4 - 6

3 oranges

100g sponge finger biscuits

250g mascarpone

2 large spoons of icing sugar

100ml skimmed milk

1 lemon , juice and 1 tablespoon of rind

1 teaspoon of vanilla extract or paste

1 punnet of raspberries

1 x 100g bar of dark chocolate , to grate

Squeeze the juice from the 3 oranges into a bowl. set aside.

Mix the mascarpone and icing sugar in a separate bowl, add milk and blend well. Add grated lemon rind, lemon juice, add the vanilla extract and whisk away until smooth.

Pour a tablespoon of orange juice in serving bowl or dish, add a third of the mascarpone mixture. Add half of the biscuits on top of mascarpone. Take another large tablespoons of juice and spread over the biscuits. Spread half of the remaining mascarpone mixture over the sponge finger biscuits. Add another layer of biscuits, take another spoonful of orange juice & spread over biscuits and top with remaining mascarpone mixture. Grate some chocolate over the mascarpone and scatter the raspberries over it. Top with further grated chocolate.

Keep in fridge for approx 1hour before serving.
