PEACH & ALMOND GALETTES

Here’s a recipe that you must try!

Took only a short time to put together and the end result was out of this world! So simple and yet so delicious!

I was too quick to take a photo and I didnt get a chance to snap the pastries with the dusted icing sugar on top.

This one you must make

RECIPE

Makes 4

25g butter, room temperature

2 tablespoons of sugar

1 tablespoon of vanilla essence

1/2 cup of almond meal

1 sheet of frozen puff pastry, thawed

3 ripe peaches or one can of peaches

icing sugar to dust

Pre heat oven to 180C.

Line a large tray with greaseproof paper.

In a bowl, add the almond meal, butter, vanilla essence and sugar and mix well until all is well blended.

Using a 11cm cutter (I used a small dessert cup which did the trick nicely) . Cut 4 rounds from the pastry and place them on the prepared tray. Score a line into the pastry approx 1cm from the edge to form a rim. Prick the pastry inside the centre circle with a fork.

Spread the almond mixture in each centre of the pastries. Cut any large pieces of peach into neat slim wedges. Arrange the fruit over the almond mixture, piling it up nicely as necessary.

Bake in oven for approx 15-20mins or until golden brown in colour. Remove from oven, allow to cool for 5-7mins. Dust galettes with icing sugar and can be served with a scoop of ice-cream.
