COOKBOOK: SLOW - Weight Watchers - Mag Recipe

I'm not a big fan of rhubarb but this dessert was delicious. The combination of this fruit with the chocolate coated & nut bars was delicious! I'm not sure how it made its way into a weight watchers recipe book but I’m grateful it did!

Not hard to make at all and everyone loved it!




Serves 4

3 sticks of rhubarb, thinly sliced

2 tablespoons of caster sugar

150g frozen raspberries or frozen berries

2 teaspoons cornflour

3/4 cup plain flour

2 tablespoons of brown sugar

2 nut bars, chopped finely

1 chocolate coated nut bar, chopped finely

Preheat oven to 180C.

Lightly grease with butter 4 ramekin dishes or ovenproof dish(1 cup)

Combine rhubarb, caster sugar and 2 tablespoons of water in a medium saucepan over medium heat. Cook covered, stirring occasionally for 4-5mins or until rhubarb is tender. Remove from heat. Toss frozen raspberries in cornflour, then stir into rhubarb mixture. Spoon fruit into prepared dishes.

Combine flour & brown sugar in a bowl.
