I have always liked how Margaret Fulton cooked! She is now 94years old!! Amazing!…..and she shares ‘almost’ a birthday with me (the 6th of October!) and of course the love of cooking!

Love her cookbook, love the recipes……only problem, I have to times the amount of ingredient by 4 to feed the family!

This recipe was deliciousssssss!And great for all fussy-fish eaters!

RECIPE

Serves 2

15g butter

3 tablespoons plain flour

3/4 cup of milk

1 tablespoon mayonnaise

1/2 teaspoon lemon juice

Salt & pepper

250g white fish fillet

1/4 cup breadcrumbs

25g bacon, chopped

1/4 grated cheese

2 tomatoes, sliced thinly

Melt the butter in a saucepan, stir in the flour and cook for 1min or until the mixture comes off the side of the pan.

Gradually blend in the milk and stir at all times, vigorously, until the sauce thickens. Remove from heat. Stir in mayonnaise, lemon juice and salt & pepper to taste.

Lay the fillets in a casserole dish and pour the sauce over it. spread the sauce to cover all the dish.

Combine the breadcrumbs and bacon. Sprinkle over the sauce. Sprinkle the cheese over the bacon mix. Cook in a moderate oven 190C for approx 20mins and then grill for 2-3mins to brown the topping. Remove from oven. Place the sliced tomato over the bake and its now ready to serve.
