I loved this tart! Super easy to make and delicious!

Tomatoes are rich in vitamin A & C. They also contain an antioxidants called lycopene which is known to lower the risk of certain types of cancers.

This one is a must. Serve it on its own as a light summer’s lunch or as a side serving with a main.



Serves 4

6 cups mixed medley tomatoes, halved

1 sheet of puff pastry, thawed

2 tablespoons pesto

1 tablespoon fresh thyme, finely chopped

1 tablespoon dry oregano

Salt & pepper

1 egg, beaten lightly

Heat oven to 180C.

Place the tomatoes in a bowl, add oregano and thyme, salt and pepper and mix well.

Grease a flat oven tray.

Place the sheet on the tray and fold in edges to form 1cm border.

Spread the pesto in the base of the pastry and top with tomatoes.

Brush the edges with beaten egg. Bake for 20mins or until golden and pastry cooked through.

Slide to a serving plate and cut into for portions. Ready to serve.
