Salmon wrapped in prosciutto, served with lentils, spinach and lots of herbs! Your mouth is burst with nutrition! What a healthy choice!
I made these to take with me to a dinner party and they were a huge success! Super easy to make!

Serves 4
250g lentils, cooked
4 x 220g salmon fillets (with or without skin on)
Salt & Pepper
8 slices of prosciutto
Olive oil
Handful of mint, chopped finely
Handful of basil, chopped finely
Handful of parsley, chopped finely
3 large handfuls of baby spinach
Yoghurt
Preheat oven to 220C
Half the salmon fillets and sprinkle on both sides with salt and pepper. Wrap a piece of prosciutto over the salmon piece making sure the end of the prosciutto strip is placed on the bottom.
Place salmon pieces evenly on oven tray. Brush with olive oil. Sprinkle with fresh herbs. Cook in oven for 12-15mins or until cooked through.
Heat a tablespoon of olive oil in pan and add the lentils to coat them. Add a handful of herbs and mix well for a min. Take off heat and set aside.
On a serving plate, place the baby spinach, lentil mixture over, topped with cooked salmon pieces. Ready to be served.
Serve with a side dish of yoghurt to drizzle over salmon.
