COOKBOOK: Mag Recipe - Woman’s Day
Some just don’t like to eat their vegetables so sneaking it into their pasta isn’t such a bad idea! For this recipe I used agnolotti but you can use ravioli or gnocchi (which is my least favourite pasta)
A great recipe! Add crumbed feta for that little extra cheesy flavour.
RECIPE
Serves 4
1 tablespoon of olive oil (to cook the pasta-add in the water)
Salt (add to the water to cook the pasta)
500g agnolotti (you can use ravioli or gnocchi)
1 cup of vegetable stock
40g butter
2 cloves of garlic, finely chopped
1 medium onion, finely chopped
1 medium head of broccoli, cut into floret sizes
1 bunch of asparagus, chopped in half
120g snow peas, ends removed
1 cup thickened cream
1/4 cup of pesto
1/4 basil leaves , chop finely
4 tablespoons of pine nuts
Feta crumbled to serve long with a loaf of garlic bread
THE GREENS
Broccoli - I like to cook it in the microwave for approx 6mins
Snow peas - I dont pre-cook
Asparagus - I cut off the white tips and cut the asparagus approx 1 inch from the end. The ends are thicker and they always need a little more time to cook than the spears. I place them in a microwavable bowl, add a tablespoon of water and micro approx for 8mins. Drain and set aside. Microwave the spears for approx 4-6mins. Drain and set aside.
Place the pine nuts in the microwave and allow them to roast for approx 4-6mins. Careful with the microwave, they will brown very quickly in the centre. Take them out and mix in 3mins interval.
In a large frying pan, heat butter and fry the garlic and the onion until it is soft.
Add snow peas, fry for a few minutes. Add stock , add broccoli , mix well. Bring to boil, simmer. Add thickened cream and stir well. Add the asparagus and the pine nuts. Combine well. Add pesto sauce. Allow to simmer for another 3-4mins. Add basil, combine and then remove greens from hotplate.
Cook the pastas as per the instructions on the packet. Serve pasta in a bowl and add the green mixture including the cream pesto liquid .
Allow it to stand for 10-15mins before you serve. This will give the pasta time to absorb the juices and flavours.
