ALMOND CRUMBED CHICKEN SCHNITZEL

Simple and super easy! I made it as a light lunch and it was very successful! I do like chicken tenders, they’re small portions and a very soft meat. Great for kids! Crumbing with almond meal was a great way to introduce a different method and one that I truly loved.

Almond meal is rich in vitamin E and other antioxidants which helps reduce the risk of serious health conditions such as heart disease, strokes, diabetes and cancer.

RECIPE

Serves 4

Olive oil for shallow frying

12 chicken tenderloins

1/2 cup plain flour

Salt & pepper

2 eggs, lightly beaten

1 cup breadcrumbs

1 cup almond meal


I shallow dish add the plain flour, salt & pepper, and mix well. Set aside.


In another shallow dish add the breadcrumbs & almond meal and mix well, set aside.


Take the chicken tenders and coat them in the flour. Shake them and dip them in the egg and straight into the breadcrumbs. Press down to coat well.


Add 1cm coverage of olive oil in a deep frying pan. Bring to hot and add the chicken tenders. Fry for approx 1-2mins on each side or until cooked through and golden. Serve with green salad or in a bun.
