ANTIPASTO CHEESE XMAS TREE

It seems early but it’s actually just around the corner!

Prepare yourselves, this is one that must be made for the festive season! I made it last xmas and forgot to share it ……..so here it is!

RECIPE

Serves 10 - 12


Tree

8 cups cream cheese, softened

1 cup sun dried tomatoes, chopped

1 cup chargrilled capsicums, chopped

1/2 cup dill pickles, chopped finely

1/2 cup parsley, chopped finely

Salt and pepper


Tree Decorations

4 cups of mixed olives, pitted (black, green, kalamata)

1 cup sundried tomatoes, strips

Dill , handful of small branches

Crackers and cold meats (salami , prosciutto)


In a bowl combine all the tree ingredients and mix well.

Lay out a large piece of plastic on your bench top. Scoop the cream cheese mixture onto the glad wrap/plastic. Cover it with 2 large pieces of glad wrap/plastic , placing them in opposite direction.

Use your hands to mould the cream cheese mixture into a tree shape. Then carefully pick up the tree with one hand and peel off the bottom plastic with the other hand, have the serving plate nearby and quickly place the base of the tree on it. Remove the two pieces of plastic set over the tree.


Use a cake spatula to smooth the edges.


Decorate the tree with the mixed olives, place them evenly spread out on the tree. Push each lightly into the cream cheese mixture. Follow with the sundries tomatoes strips. Once the cheese dip is completely covered, with the assistance of a skewer or large toothpick, place the small pieces of dill between the olives and capsicums and dig in to set and they will form the branches.


Ready to be served with crackers and cold meats.
