COOKBOOK: Mag Recipe

The little pleasures of life……making muffins & cupcakes. This is a healthier choice, introducing banana and muesli to the mix! This is a great recipe for the kids to make (under adult supervision). Rainy day, need to keep the young ones entertained! Take out those paper cases and get baking.

I use a processor but this can most certainly be mixed by hand.

Makes 24

2 cups of self raising flour

1 cup muesli (of your choice)

Handful of goji berries or any other dry berry of your choice

1 cup sugar

1 teaspoon of bicarb soda

1 tablespoon ground cinnamon

1 1/2 cup mashed banana (approx 2 large banana or 3 medium)

1 1/4 cups of milk

1/2 cup grapeseed oil

2 eggs, lightly beaten

100g goji berries

1/2 cup extra muesli

Line two trays 12 holes with paper cases.

Pre heat oven 180C

Place flour, goji berries, muesli, sugar, bicarb soda and cinnamon. Combine well. Add banana, mix well. Add milk in batches and grape seed oil. Mix until well combined.

Divide evenly in paper cases. Sprinkle with extra goji berries snd muesli.

Bake in moderate oven for 25mins or until cooked through. Serve at room temperature.
