BOCCONCINI & TOMATO BRUSCHETTA

Too yummy!

So easy to make that they make the perfect snack on those days you really do not have time to cook nor leave the home! If you don’t have bocconcini, replace with feta or grated tasty cheese.

RECIPE

Makes about 15


1 loaf of ciabatta, sliced

or, 40cm french stick cut into 15-20pieces

3 cloves of garlic

2 tablespoons of olive oil

butter

1/4 cup of basil, chopped

salt & pepper

150g bocconcini, sliced

150g cherry tomatoes, halved


NOTE: Bocconcini is a cheese that resembles small balls, It is bought from the deli section of your supermarket. It has a lovely mild taste


Add olive oil in a pan and lightly fry the garlic, add the basil and stir for half a minute. Remove from heat.


Place greaseproof paper on a flat oven tray. Lay out the bread slices. Butter the slices. Grill until just golden.

Remove from grill and top with the garlic/.basil mix. Top with tomatoes and bocconcini and spray with salt and pepper. Place in grill for a very short time to melt the cheese.

Remove from grill and its now ready to serve.
