COOKBOOK: Family Food & Weekend Feasts - Jangle Bloom

A very simple dessert! I love pears, they’re just sweet enough in taste and they make a great dessert. Nothing to this recipe and it was delicious.

Serves 4

4 firm pears, quartered and core removed (I used Nashi Pears)

3 tablespoons brown sugar

butter for oven tray


200ml of coconut cream

1 cup of milk

4 egg yolks

2 tablespoons of vanilla sugar (I used dusting sugar)

1 teaspoon vanilla bean paste

2 tablespoons cornflour

Preheat the oven to 180C

Place the pears in a bowl, add the sugar and mix well. The sugar will instantly start to melt.

Place a buttered tray in the oven for 5mins and remove.

Place the pears on the tray and pour any of the juices over the pears. Roast for approx 10mins or until they’re tender.

Meanwhile, for the coconut custard, combine the coconut cream and the milk in a heavy saucepan over medium -low heat. Cook stirring for 5-7mins. Cook until hot and remove from heat.

In a mixer, add egg yolks, sugar, cornflour vanilla bean paste, mix well until it changes to a light colour. Now add the milk mixture in batches and mix on low until all combined. Pour mixture back in pan and place it on low heat. Stirring at all times, allow it to thicken (app 7-10mins)

Serve custard over pears.
