A homemade pesto is the bomb! You know how much I love fresh herbs! Not only are they full of vitamins but they add a massive amount of flavour to our dishes.
Pesto is a sauce that originated in Italy and its mainly used with pasta. Simple to make and it’s great as a vegetarian meal along with just the pasta, minus the chicken.
Me , I love it with the chicken and chorizo. This was definitely a hit at home.

RECIPE
Serves 4
500g spaghetti
Olive oil
1 tablespoon butter
Salt & pepper
400g cooked chicken, shredded
2 chorizos, sliced thinly
3 cups mushrooms, sliced
4 cups broccoli, chopped into bite sizes and boiled or microwaved
BASIL PESTO
1 large handful of fresh basil leaves
80g pine nuts, toasted
100g parmesan cheese, grated
1/2 cup olive oil
Boil water in a deep pot. add salt and a tablespoon of olive oil. Cook the pasta as per package instructions. Drain and put in a deep serving dish.
Add the pesto sauce and butter and mix well into the pasta. Set aside.
Add a little olive oil in a pot, add mushroom and stir for a min or two. Add chorizo, cooked broccoli & cooked chicken. Mix well. Add salt & pepper.
Add chicken mixture to the pasta and carefully combine well. Ready to serve.
BASIL PESTO
Place all the ingredients in a processor. Process until smooth in texture.
