CHOCOLATE COFFEE SQUARES

COOKBOOK: 150 Delicious Squares

These are best made a day before. Totally delicious and simple to make. There is no baking for these little beauties.

Great to serve with an afternoon tea and enjoyed by the whole family.




RECIPE Serves approx 32 pieces

30 wheatmeal biscuits

150g butter

125ml milk

2/3 cup brown sugar

75g dark chocolate chips

1 1/2 cups of wheatmeal biscuits , finely chopped

1 cup walnuts, chopped finely


COFFEE ICING

2 cups icing sugar, sifted

1/2 cup of cocoa, sifted

3 tablespoons butter, softened

3-4 tablespoons of hot storing prepared coffee

Line a tray 22x22cm (9 x 9 inch) with greaseproof paper.

Line rows of wholewheat biscuits. Set aside.


Combine butter, brown sugar and milk. Bring to boil and turn off heat.

Add chocolate chips. Stir until melted. Add shredded wheatmeal biscuits and chopped walnuts. Stir well. Spread evenly over biscuits in tray.

Cover with second amount of biscuits. Press down gently. Allow it to cool. In the meantime make the icing.

COFFEE ICING: Beat the icing sugar, cocoa, butter and hot strong prepared coffee in a bowl. Add more coffee or icing sugar as necessary until spreading consistency.


Spread over the biscuits evenly. Refrigerate for 6hrs or overnight.

Cut into squares and its now ready to serve.
