GINGER WAFFLES WITH STRAWBERRIES

I went out and bought myself my first waffle maker and now I’m scratching my head asking myself why had I not purchased one sooner.

I did wonder if these waffles were going to be good enough to serve my guests for breakfast or would I have to do a quick dash to the cafe shop! Let me tell you that they were such a success, they asking for more! The waffles were absolutely delicious and super easy to make. The waffle maker did not let me down and I will most certainly be making more very soon!

If you do not have a waffle maker use the batter for pancakes. Use a non stick frying pan, melt a dash of butter, drop one large scoop of mixture and turn soon after its set. Remove and serve with strawberries and golden syrup.



RECIPE

Makes 4

1 cup strawberries, rinsed , remove leaves & cup in half lengthways

2 tablespoons sugar

1 1/2 cup of plain flour, sifted

1 1/2 teaspoon baking powder

1/2 teaspoon bicarbonate soda

1 tablespoon ground ginger

1/4 teaspoon ground nutmeg

1 tablespoon ground cinnamon

1 cup buttermilk

2 eggs, lightly beaten

1/4 cup of brown sugar

1/4 cup melted butter

1 tablespoon golden syrup

icing sugar

Place the strawberries in a bowl, sprinkle with sugar , mix well. Place glad wrap to seal and leave in the refrigerator for approx 2hours or overnight.

Mix in a large bowl the sifted flour, baking powder, bicarbonate soda, mix well. Add ginger, nutmeg, cinnamon. Mix well. Add to the mixture the lightly beaten eggs, buttermilk and mix until combined. Add the brown sugar and melted butter, golden syrup and mix well.

(Note: I used an electric mixer to quickly smooth out the batter of any lumps - you can hand whisk until smooth)

The waffle makers have a selection to choose from. I selected ‘light’ for one batch and ‘medium’ for my second batch and they both turned out great. Take the waffles and place them on the plate. Top with strawberries and some of the strawberry syrup. Drizzle some extra golden syrup and sprinkle some icing sugar over it. HINT: if you do not have a waffle maker, you can use a non stick frying pan. Grease with some butter , add batter to cover the base. Allow it to brown and flip over to cook other side. Approx 1-2mins on each side.
