HAM & AVOCADO (on muffin or toast)

Simple……delicious……super easy to make

Make it on sliced bread or muffins. A great light lunch! The avocado I used was a little on the soft side and this is why I sliced it in the shell rather than scooping it out onto a surface.


Serves 4

2 muffins (cut in half) or 4 pieces of sliced bread


4 slices of cheese

8 slices of thinly sliced ham (from deli) or you can slice your own

Spinach, a handful of leaves

2 large tomatoes, thinly sliced

2 avocados, cut in half lengthways, stone removed, sliced

2 tablespoons of chopped parsley

Salt & pepper

Grill the two halves of a muffin or toast the sliced bread. Butter the bread.

Top with cheese, spinach, tomatoes, ham and avocado. Sprinkle with parsley, salt & pepper. Ready to serve.
