HONEY MUSTARD PORK WITH ROASTED PEAR SALAD

I think by now you know pork is not my favourite meat, but this dish could have changed my opinion.
What an absolutely delicious meal! So easy to make and I loved the mustard flavour on the pork. Now about the pear! This fruit is delicious and sweet on its own, but when baked with potato…OMG! I had no idea it was going to be so delicious! I had not told anyone about the pear and each of my guests ate it and asked later what was the sweetness with the baked potato. Totally delicious!
3 pears, cut into four pieces, remove the core
500g potatoes, cut into half or quarter depending on size
1 tablespoon of olive oil
2 extra tablespoon of olive oil
Salt and pepper
2 tablespoons wholegrain mustard
2 tablespoons honey
1.8kg - 2.4kg of pork rib roast
2 tablespoons of dry thyme ( or fresh, chopped finely)
150g cherry tomatoes, halved
200g of spinach lettuce leaves
Preheat oven to 180C
Place the potatoes in oven tray, Season with salt and pepper and 1 tablespoon of olive oil. Combine well. Spread potatoes so they don’t overlap. Bake in moderate oven for 30mins.
Remove tray from oven and add the pears and thyme. Mix carefully. Back in oven to bake for a further 10-15mins or until potatoes are cooked through.
In the meantime, place mustard and honey in a bowl. Mix well. Add extra olive oil. Combine well.
Take the pork rib roast and coat it with half of the honey and mustard mixture. Heat a non stick frying pan and place the pork face down for less than half a minute. It will start to colour right away. Turn the pork over and do the same on other aside. NOTE: It will smoke up so keep your eyes on it. (note: we just want to brown the top of he pork slightly)
Remove and place the pork back in the oven tray. Brush the rest of the honey and mustard mixture over the pork. Place in moderate oven for approx 50mins to an hour, or until cooked through. Allow it to rest for 10mins before cutting.
Place spinach lettuce on plate, top with baked potato and pears, add cherry tomatoes. Place a piece of pork over it , spoon some of the pan juices over the pork and its now ready to be served.
