Anything that can be made a day in advance is a good thing!

Amazingly delicious and way to easy to make.

I used fresh strawberries, mulberries, blueberries and raspberries, but I guess you can change this convo depending on what is in season at the time. A different convo to use is peaches, mango and pears with a pineapple jelly!

The beauty about this dessert is that it’s not too heavy and can be served day or night and suitable at any time of the year! Just perfect!

This one is going to be added to my ‘party’ fav for sure!

RECIPE

Serves 4

9g sachet raspberry jelly crystals

boiling water & cold water (as per the jelly package)

500g of mixed berries (strawberries, mulberries, raspberries and blueberries) - rinsed, cleaned & split if too big

200g mixed (for decoration on the top of jelly

1 teaspoon sugar

1 1/2 cup fresh vanilla custard



Place all berries in a bowl, add sugar, mix well and refrigerate for 30mins.

After the 30mins, place jelly crystals in a bowl or large jug and mix with hot and cold water (measurements as per jelly package instructions)

Take the berries and with tongs split the berries between each of the 4 glasses. Pour the jelly evenly over the berries and refrigerate over night or for 4 hours.

When set, add the extra mixed berries over the top, add the vanilla custard and they are ready to serve.
