COOKBOOK: Women’s Weekly - Great Italian Food

To compliment the perfect pasta, there is a perfect mushroom sauce. Super simple to make and delicious.

Pagli e Fierno means a mixture between a plain yellow and green wide ribbon fettuccine / tagliatelle. It comes from the italian name meaning straw & hay.

The fettuccine was home-made and can be seen in my earlier video.

Serves 4

2 tablespoons olive oil

6 green onions / shallots , thinly sliced

3 cloves of garlic, chopped finely

600g button mushrooms , cut in half

2 tablespoons of white wine

Salt & Pepper

310ml fresh cream

1/4 cup fresh parsley, chopped finely

150g plain fettuccine

150g green fettuccine

Parmesan cheese

Heat oli in pan and add garlic, onions, stir for a min until onions are just getting soft. Add mushrooms, stir for a min. Add parsley, salt and pepper, white wine and allow to cook for a further 2 mins. Add cream and simmer for a further 2-3mins.

Take off heat and set aside.

Meanwhile, cook two pasta in boiling water (add a little salt and a dash of oil to the water). Cook pasta until just tender, approx 10mins or as per package instructions.

Drain. Add to dish. Top the mushroom sauce, top with cheese and it is ready to serve.
