PEACH GLAZED PORK ROAST

Peach and pork, what a great combination! Pork is that type of meat that embraces fruit. A combo of peach and pork, with its sweetness coming from the peach syrup, is just delicious!

Cook pork to your liking. It should be in a moderate oven for approx. 50mins per kilo. Pork should to be left too pink in colour.

Add the peach mixture coming into the last hour. You may need to cover with foil if its getting too much colour.

RECIPE


2.2kg of pork roast

olive oil

Salt

350g of diced peaches in syrup

2 tablespoons of lemon juice

1 teaspoon of allspices


Pre heat oven to 180c.


Place meat on a rack in a roasting pan. Rub roast with olive oil and salt and place in a moderate oven for approx 1 hour.

Meanwhile in a bowl, mix all other ingredients.


Remove the roast quickly from the oven and pour the syrup and peaches over the pork roast. Return to the oven for approx 30mins to 1hr, depending on how you like your meat cooked. Place foil over the pan if you feel that it is burning the peaches.


Pour pan juices over the pork after you have carved. Its now ready to serve.
